Job Title: Chemist
Location: Chunchunkuppe,Bangalore-560132 (Karnataka)
Reporting To: Manager
Qualification: BSC-MSC(Chemistry)
Experience: Fresher-2 Years
Job Profile:
LABORATORY:
1. Selection / QC of grapes for crushing, checking all quality parameters before crushing.
2. Monitoring all processes of fermentation along with rack and return, pumping over, punching down, maceration, aeration, etc.
3. Basic analysis of wines: – T A , SUGER, V A, SO2 by Ripper and aeration aspiration method., chromatography, alcohol, water hardness, etc.
4. Fining of wines, lab trials for different fining agents, etc.
5 HACCP , FSMS , conversant with food safety practices
6. Bottling line analysis of finished wines, Ready cartons, dispatch consignments, dry packaging material, record keeping, and daily upgradation of production and wine records.
7. Excise related bookkeeping, monitoring hygiene, and safety protocols in the winery.
Desired Candidate Profile:
Winery Making: –
1. To check the quality of grapes received at winery to perform must and juice analysis during crushing and
do additions as per standards.2. Vineyard visit to check the quality of Grapes.
3. Do crushing and pressing of received grapes.
4. Daily fermentation analysis to maintain wine in good condition as per quality standards.
5. To avoid ullage and keep tanks in top condition.
6. To maintain the temperature of the wine, running chillers as per the requirement.
7. Maintaining the wine in good condition by adding chemicals (as per the standard) and by gas.
8. Preparation of blends prior to bottling.
9. Involvement in Wine testing and blend preparation.
10. Racking of wine.
11. Barrel filling, emptying, and maintenance operations.
12. Tank and tank hall cleaning and sanitization.
2. Wine Production:-
1. Wine filtration by the cross-flow filter.
2. Chemical additions as per the standard.
3. Monitoring the bottling machine.
4. Cleaning and Sanitization of bottling and filtration machines.
5. Maintenance of bottling and filtration machine.
Excise Documentation:Â
1. Updating FW-3 format of book.
2. Updating Bulk wine register.
3. Updating bottling indent, Racking indent, crushing indent book.
4. Updating Daily Tank wise crushing and racking book.
5. Updating daily tank status.
6. Updating the Barrel Book.
